I'm not getting any stress values by color, max stress values or similar graphical representations in the 3D plot in Version 5.10. I can get the Deflected Shape and Grow to work, but the "Stress Colors by Value" is pretty handy and it's not working.

is there some setting I should tweak ?

I didn't generate this file in 5.10.. it's a 5.00 file that I brought into 5.10. Could this be the problem ?

This is a problem with the implementation of the new HOOPS library in Version 5.10. This will be fixed in the 1st build to Version 5.10, which will hopefully be released this week.
