I have a piping specification that contains buttwelded pipe and fittings, and also roll grooved pipe and fittings with Victaulic couplings. The default BW piping routes correctly, but I can't get the Victaulic piping to place correctly. When I route roll grooved pipe the system places the BW elbows instead of the roll grooved ones. Is there a way to do this?

I think you can choose elbow type from the router commandline options.

I recall with victualic, coupling are setup as the clamps and also have custom endtype tables and match endtype table setup.
